How can I update two iPods on one computer without overlapping songs?

It seems like everytime I plug in an iPod, it automatically syncs itself to whatever is in my iTunes library, which makes it really difficult to have two iPods in the same house with different music (other than deleting all the music from it every time I update it, which would be a total pain). How can I set up my computer to update them manually? Also, I have a Mac, if that helps.
